A tropically fresh pineapple marinade gives chicken or pork a delicious sweet and savory twist. This easy marinade is made with just a few ingredients.

Ingredients

4 tbsp Bonne pineapple purée
2 tbsp oil
A few sprigs of fresh coriander or mint, finely chopped
4 tbsp soy sauce
2 cloves garlic, finely chopped
A pinch of black pepper
A pinch of chili powder

Instructions

Mix all the ingredients together. Brush the marinade onto the meat, or place the meat in a bowl and toss it in the marinade until well coated.

Cover the marinated meat (for example with cling film) and let it marinate. The marinating time depends on the type of meat, as the enzymes in pineapple affect different meats differently:

  • Chicken: 1–2 hours
  • Pork: 2–3 hours

For vegetables

Use the marinade only for seasoning. Let it sit on the surface of the vegetables for a maximum of 30–45 minutes before grilling.

Tip

You can prepare a smaller extra batch (for example half the recipe) to brush onto the meat toward the end of grilling for added flavor and glaze.
