tropical cake, fruity cake, Easter cake, easy cake recipe
This tropical cake is wonderfully moist and delicious even on its own. You can, however, add a frosting on top and decorate it for Easter with small chocolate eggs and kumquats. You can also try decorating it with different berries or fruits.
Cake
100 g butter or margarine
3 dl sugar
2 eggs
3 dl wheat flour
1 tsp vanilla sugar
1 tsp baking soda
½ dl cream
3 dl Bonne Tropical purée
Additionally
25 g butter
¾ dl breadcrumbs
Frosting
200 g cream cheese
1 dl powdered sugar
1 dl Bonne Tropical purée
10–15 kumquats
100 g small chocolate eggs
Beat the butter (or margarine) and sugar together until light and fluffy.
Add the eggs one at a time, whisking well after each addition.
Combine the dry ingredients separately, then add them to the mixture along with the cream and Tropical purée.
Mix until you have a smooth batter.
Pour the batter into a greased and breadcrumb-coated cake tin of about 1.5 liters.
Bake at 150°C on the middle rack for about 1 hour.
Let the cake rest in the tin for about 10 minutes, then turn it out onto a serving dish.
Frost the cake once it has cooled completely.
For the frosting: whisk together the cream cheese, powdered sugar, and Tropical purée. Spread evenly over the cake.
Decorate with whole or halved kumquats and small chocolate eggs.
Serve as a delightful Easter treat!
